Do you ever have chicken breast on hand and wonder what you could make with them? This is a slow cooker chicken breast recipe that might just become one of your favorites!
This simple chicken recipe is a toss-and-go meal. These are my favorite kinds of meals for a busy day and a busy family.
Put 4 to 5 chicken breasts in a slow cooker and top with a jar of Herdez Salsa Verde. (You can use any brand but this is all I ever use.) I usually use the 24-ounce jar, but this time my chicken breasts were not very big so I went with the 16-ounce jar.
That is all that you do! And you won’t believe how flavorful this chicken is. I thought this recipe was just too simple to have much flavor. I was so wrong!
The next step is to cover and cook the chicken on high heat for 3-4 hours or on low heat for 7-8 hours. The chicken is ready when it shreds with a fork and reaches an internal temperature of 165° Fahrenheit.
For the final step, take the chicken breasts out and shred them on a plate or cutting board, then return the chicken to the crockpot. Stir the shredded chicken together with the juices and you are all set.
Use a slotted spoon to serve. We put this salsa verde shredded chicken on flour tortillas and top with cheese, pico de gallo, guacamole, and sour cream. You can also serve it on a salad, make nachos, tostadas, quesadillas, or enchiladas with it!

What you do is put the leftover chicken into a soup pot. Here is my all-time favorite soup pot! I use it multiple times per week. Next, add a couple of shakes (about 1/2 teaspoon) of these spices: cumin, chili powder, and garlic salt.
Then you can add a box of chicken broth, a can of black beans or pinto beans, half of a bag of frozen corn, and a can of diced tomatoes with green chilis. After it is all together in the soup pot, bring it to a boil then put it on simmer until all ingredients are heated and the frozen corn is done.
Once the soup is heated, spoon into a bowl, and you can top it with grated cheese, crushed tortilla chips, sliced avocado, or sour cream. This is a great way to repurpose this chicken (if you have any leftover) and to get another meal out of it. And this soup is SO GOOD!!!
