These 3 ingredient cake batter cookies are a soft, slightly chewy cookie that you can customize!

You can pick any flavor of cake mix for this recipe, so feel free to try them all!

This recipe is just for the cookies, but I did whip up some vanilla icing so my kids could decorate them for Valentine’s Day.  Yes, they are teenagers but there are just some things you never grow out of and I’m so glad!

Today, I used a red velvet cake mix, and what in the world?  Not only were these so yummy and good, but these cookies were whipped up and ready in 15 minutes.  That is my kind of baking!

First, I picked a cake mix out of the ones I had on hand.  it was a toss-up between red velvet and strawberry.  It’s February so I’m thinking of all things pink and red.  I did not put anything in with the cookies, but I thought mini white chocolate chips would be a great addition to these.

Here are some different flavor ideas for you to try:
  • vanilla
  • chocolate
  • red velvet
  • strawberry
  • lemon
  • devil’s food
  • Coconut
  • fudge marble
  • confetti

Which one would be your favorite?  I think I’m going to have to say red velvet for the win in my book!

How do you make cake batter cookies?

Simply mix together your choice of cake mix, eggs, and oil.  Then spoon out on a cookie sheet and put them in the oven.  Easy-peasy!

You could also add some icing and sprinkles to these for extra fun.

Let me know if you try these and what you think.  For a quick and easy cookie, these are great!
