One sheet pan meals are so quick and easy!

I randomly tried this easy chicken sausage sheet pan meal after seeing several variations of sheet pan recipes recently on Pinterest.

What I love about this recipe is that it is fresh and delicious!  But also at the end of cooking your meal, there is only one pan to wash!  That is a win-win in my book!

This is the perfect easy chicken recipe for dinner on those busy nights when you don’t have a lot of time to cook.  We still try really hard to get our family around the dinner table at least a few nights a week.  Some nights that is easier than others!

So having quick and easy dinner ideas on hand is really important.  This sheet pan chicken dinner recipe fits the bill every time!

I should note that this recipe will work great with pork or beef sausage too.  We just chose chicken because that is the one protein that everyone in our family really likes.

How do you make this chicken sheet pan meal?

I slice up a package of fully cooked chicken sausage. I found several flavors at my grocery store, including apple gouda, spinach feta, queso poblano, and many others!

So you can get creative and decide which flavor of sausage your family would like.  We decided on the Andouille smoked chicken sausage and it was a hit with our family!

Here is what I did to put this one sheet pan meal together:

  • Quarter some Brussel sprouts (I used about half of a bag of Brussel sprouts which comes out to be about a cup to a cup and a half)
  • Quarter some red potatoes (for me this is about half of my 2-pound bag)
  • Slice a package of fully cooked chicken sausage (mine was 5 sausage links totally 12 ounces)
  • Drizzle all the ingredients with about 2 tablespoons of olive oil or avocado oil
  • Sprinkle about a tablespoon of sea salt over the veggies
  • Toss together
  • Place in a 400 degree preheated oven
  • Roast for 25 to 30 minutes

I took the sausage out and continued to roast my vegetables a little longer because we like our Brussel sprouts and our potatoes extra crispy.

This recipe has so many variations

You can choose just about any vegetable to go in this one-sheet meal.  If you don’t like Brussel sprouts, try using asparagus, or broccoli, or maybe red bell pepper.

Not a big fan of red potatoes?  Try substituting 1/2 inch cut sweet potatoes.  Sweet potatoes seem to take a little bit longer to cook, so I would put them in the oven first and give them a head start and then add the rest of the ingredients so that all the veggies finish roasting at the same time.

To kick it up a notch, you can also sprinkle your veggies with some Italian seasoning, and/or garlic powder, and top with grated parmesan cheese.  There are so many ways to make this one sheet pan meal!
