Calling all Mexican food lovers!  This Easy Mexican Bake Dinner is such a great family meal.  You can whip this up in a snap which makes it another perfect meal for busy families.

This Mexican dish has been in my family forever.  My mom made this growing up and we named it Stuff.  Creative, I know!  And this “Stuff” is comfort food and we all love it around here.  It’s a great easy recipe to have on hand for dinner. Another win for this dish is that it only uses 5 ingredients!

Mexican Bake goes perfectly wrapped in a tortilla, served with tortilla chips, or a tostada.  We had this last night for dinner and I served it with chips, salsa, and this Creamy Avocado Dipping Sauce.  Our dinner was easy, tasted great, and the best part is we got to spend time around the table as a family.

There are 5 main ingredients in this dish which are:

  1. Ranch Style Beans
  2. Spanish Rice
  3. Ground beef (or in our case, venison)
  4. Cheese
  5. Onion

You could also add bell pepper, green chilis, or jalapenos depending on your taste.  We keep it simple, but another suggestion would be to buy Ranch Style beans with jalapenos for an added kick. 

How to Make Easy Mexican Bake Dinner

Start cooking your Spanish rice in boiling water according to directions. 

Next, brown your ground beef with a small, chopped up onion.  I season the meat with salt, pepper, chili powder, ground cumin, and garlic powder.  This is my go-to for seasoning Mexican food. 

Once the meat and onion are cooked, add the can of Ranch Style beans, and one cup of the Spanish rice.  Mix this all together.  

You can cook this in a casserole dish or you can use your dutch oven.  That’s what I used last night and I love mine! Spray the bottom with a little cooking spray, then put half the beef mixture in the pan.  Then, layer one cup of cheese.  Next, put the remaining beef mixture on top of the cheese layer.  Lastly, add the remaining cup of cheese to the top of the dish.  

Now you are ready to put it in the oven until it is all heated and the cheese is melted.

Tools I Use to Make This Dish
  • Ninja Food Chopper Express – This is the newest addition to my kitchen and I am in love!  It’s so handy and small enough to easily store.  I chopped the onion for this recipe using my new chopper. 
  • Dutch oven – I use my Le Creuset dutch oven all the time.! I love that it is a life-time piece of cookware that goes from the stove to the oven.  I cooked the meat on the stove in this and then just popped it right into the oven to bake.
