This easy strawberry quick bread recipe is so fresh and good! And it took me about 10 minutes to assemble it and get it in the oven. That is my kind of cooking!
Have you ever tried strawberry bread before? I am a sucker for just about any sweetbreads and this is no exception. My mom made this strawberry bread recipe from the time I was little so this has always been a staple in our family.
It comes out with a wonderful flavor and is not dry. Do I have to say it? My friends know I don’t like this word but I’ll say it. It’s moist. Wow…that hurt a little bit! But all kidding aside, this is a good recipe for strawberry bread. My favorite thing to do is cut a piece of it while it is still warm and put butter on it!
You could add a vanilla glaze to the top of this bread and it would be wonderful! However, I like a lighter version for breakfast or a snack so I keep it more simple.
Also, it is almost Valentine’s Day as I am writing this and I am thinking this would make a great gift for a teacher or friend wrapped with a pretty bow.
Note that I have always followed what my mother did and used frozen strawberries. However, I think you could use fresh, juicy strawberries too!
To make this easy strawberry bread recipe, simply add the dry ingredients in a large mixing bowl and stir them together before adding the wet ingredients. In a separate bowl, beat the eggs and then add them to the dry ingredients. Next, add the oil and the cut-up, thawed strawberries. Mix until well blended.
Tip: Toss your cut-up strawberries in a little bit of flour until they are coated. This will prevent them from sinking to the bottom of the bread. Reserve a little bit of the strawberries to put on top of the batter in each loaf pan because it looks pretty!
Grease two loaf pans and coat them with sugar (you can use flour but I love the texture and taste the sugar gives the bread).
Spoon the batter into two separate 9×5 loaf pans. Bake in a preheated 350-degree oven for 55-60 minutes. You can make sure it is ready when it is golden on top and a toothpick inserted in the middle of the loaf comes out clean.

55-60 minutes
A quick and easy strawberry bread
3 cups flour
2 cups sugar
1 tsp baking soda
1 tsp cinnamon
1 tsp salt
1 ¼ cup vegetable oil
4 eggs well beaten
2 packages frozen strawberries 10 ounce package
Preheat oven to 350°
Mix all the dry ingredients in a large mixing bowl
Add the beaten eggs, cut-up strawberries, and vegetable oil to the dry ingredients
Mix together until blended
Spoon batter into 2 greased and sugared 9x5 loaf pans
Bake for 55-60 minutes
Toss strawberries into a little flour before mixing them in so they don't sink to the bottom.Save a few of the cut-up strawberries to press into the batter of each loaf just before you put them in the oven for appearance only.
